Pengolahan kopi Arabika varietas Ateng super

Abstract


Abstrak. Indonesia merupakan negara penghasil dan eksportir kopi terbesar keempat di dunia setelah Brazil, Vietnam, dan Kolombia. Kopi merupakan minuman terpopuler di dunia yang telah diproduksi oleh manusia selama berabad-abad. Kopi Arabika Indonesia sudah cukup terkenal di pasar dunia karena memiliki cita rasa terbaik. Hal ini dikarenakan kopi Arabika Gayo merupakan kopi yang tergolong speciality berkualitas tinggi karena memiliki aroma yang unik, kompleks dan kuat, serta sangat digemari oleh para pecinta kopi dan termasuk komoditas pasar global. Gayo varietas Gayo 3 atau lebih di kenal Ateng Super dikenal pertamakali dibudidayakan di dataran tinggi gayo dan menjadi popular dikalangan petani karena memiliki beberapa keunggulan diantaranya cepat berbuah, produktivitas relatif tinggi dan kualitas kopi sangat baik. Salah satuanya perlakuan pascapanen yang bertujuan supaya komoditas pertanian baik serta cocok ataupun pas pada saat disantap ataupun dikala digunakan untuk bahan baku pengolahan. Balittri menggunakan metode Full washed (pengolahan basah) sebagai standar oprasional prosedur dalam pengolahan kopi primer. Proses pengolahan kopi secara full washed merupakan sebuah proses pengolahan buah ceri kopi hingga menjadi gabah kering (green bean) dengan kadar air 12-13%. Roasting menggunakan level medium roast dengan suhu 200oC. Hasil menunjukkan kopi arabika Gayo varietas Tim-Tim dengan pasca panen full wash menghasilkan rasa cita rasa yang kuat dengan body kopi ringan dan lembut, karakter yang bersih, light, cenderung fruity dan acidity cukup tinggi. Roasting menggunakan level medium roast menghasilkan kopi yang cenderung balance aroma, balance keasaman dan menghasilkan banyak rasa. Processing Ateng Super Variety Arabica Coffee Abstract. Indonesia is the fourth largest coffee producing and exporting country in the world after Brazil, Vietnam and Colombia. Coffee is the world's most popular drink and has been produced by humans for centuries. Indonesian Arabica coffee is quite famous on the world market because it has the best taste. This is because Gayo Arabica coffee is a high quality specialty coffee because it has a unique, complex and strong aroma, and is very popular with coffee lovers and is a global market commodity. The Gayo variety Gayo 3 or more, known as Ateng Super, is known to have been first cultivated in the Gayo highlands and has become popular among farmers because it has several advantages, including fast fruiting, relatively high productivity and very good coffee quality. One of them is post-harvest treatment which aims to ensure that agricultural commodities are good and suitable when eaten or when used as raw materials for processing. Balittri uses the Full washed method (wet processing) as a standard operating procedure in primary coffee processing. The full washed coffee processing process is a process of processing coffee cherries into dry grain (green beans) with a water content of 12-13%. Roasting uses a medium roast level with a temperature of 200oC. The results show that Gayo Arabica coffee of the Tim-Tim variety with post-harvest full wash produces a strong taste with a light and soft coffee body, clean, light character, tends to be fruity and has quite high acidity. Roasting using a medium roast level produces coffee that tends to balance aroma, balance acidity and produces lots of flavor.Keywords: Gayo Arabica, Ateng Super, variety, full wash
