Kajian Mikrobiologi, pH dan Kadar Air Dendeng Sapi Cepat Saji Menggunakan Bumbu Aceh Instan Komersil

Abstract


Abstrak. Dendeng merupakan produk makanan berupa irisan atau gilingan daging isegar iatau  idaging ibeku iyang itelah idiberi ibumbu idan idikeringkan. iDendeng iyang idiolah idengan iproses pengawetan imerupakan isuatu icara imempertahankan idaging iuntuk ijangka iwaktu iyang icukup lama agar ikualitas imaupun ikebersihannya itetap iterjaga. iMetode imemperpanjang imasa isimpan dendeng idilakukan idengan imetode ipengawetan, idengan ipenambahan ibumbu idilakukan dengan tujuan imenjaga iketahanan iterhadap itimbulnya iserangan ijamur, ibakteri idan ikuman iyang sifatnya ipatogen ipada iproduk idaging isehingga ikualitas idaging itetap iterjaga. iPangan isemi basah ibiasanya imempunyai iaw i0,75 isampai i0,85 idan imemiliki imasa isimpan ilebih idari i6 ibulan idengan ikadar iair i15% isampai i20% idan ipH i4,5-5,1. iMenurut iSNI i2908-2013 ikadar iair dendeng isapi imaksimal i12% idan iTPC imaksimal i1x105 iCFU/g.

Abstract. Jerky is a food product in the form of slices or grinds of fresh meat or frozen meat that have been flavored and dried. Jerky, which is prepared using a pickling process, is a way of preserving meat for a long period of time so that its quality and cleanliness are maintained. The method of extending the shelf life of beef jerky is carried out using the preservation method, by adding spices, which is carried out with the aim of maintaining resistance to attacks by fungi, bacteria and pathogens in the meat product so that the quality of the meat is maintained. Semi-wet food usually has an IW of 0.75 to 0.85 and has a shelf life of more than I6 months with a water content of 15% to 20% and an pH of 4.5-5.1. According to SNI 2908-2013, the maximum water content of beef jerky is 12% and the maximum TPC is 1x105 CFU/g.
