Penilaian Sensori Kopi Arabika Volcano Gayo Menggunakan Berbagai Alat Cold Brew

Abstract


Abstrak. Kopi Arabika Volcano Gayo merupakan salah satu jenis kopi yang tumbuh dan berkembang di daerah Gayo, lebih tepatnya pegunungan Burni Telong, Kabupaten Bener Meriah dan Kabupaten Aceh Tengah, Provinsi Aceh, Indonesia. Kopi Arabika Volcano Gayo ini tumbuh di daerah gunung berapi dengan ketinggian 1000-1700 meter di atas permukaan laut. Berbagai alat cold brew yang digunakan pada penelitian ini menghasilkan penilaian sensori kopi yang beragam dan dengan elemen sensori didalamnya. Penilaian sensori kopi Arabika Volcano Gayo dapat membantu penikmat kopi dalam memilih dan menentukan dalam mengambil keputusan terkait seduhan kopi yang paling disukai berdasarkan alat cold brew yang digunakan.

Sensory Assesment of Gayo Volcano Arabica Coffee Using Various Cold Brew Tools.

Abstract. Arabica Volcano Gayo Coffee is a type of coffee that grows and develops in the Gayo area, more precisely the Burni Telong mountains, Bener Meriah District and Central Aceh District, Aceh Province, Indonesia. This Gayo Volcano Arabica coffee grows in a volcanic area with an altitude of 1000-1700 meters above sea level. Various cold brew tools used in this study resulted in various sensory assessments of coffee and with sensory elements in it. The sensory assesment of Volcano Gayo Arabica coffee can help coffee connoisseurs in selecting and making decisions regarding the most preferred coffee brew based on the cold brew tool used.
