Pengaruh Suhu dan Waktu Sterilisasi Terhadap Mutu Minuman Sari Buah Kawista(Limonia Acidissima L)

Abstract


Abstrak. Buah Kawista (Limonia Acidissima L) merupakan jenis tanaman yang termasuk suku jeruk-jerukan (Rutaceae) dan berpotensi sebagai tanaman obat. Masyarakat aceh tanaman kawista dikenal dengan sebutan “batok”, dan sering memanfaatkan buah kawista sebagai penambah rasa pada makanan seperti rujak, dijadikan sebagai obat herbal bagi yang menderita penyakit diare atau disentri dan buah kawista dipercaya dapat meningkatkan stamina tubuh. Penelitian ini bertujuan  untuk mengetahui pengaruh suhu dan waktu sterilisasi terhadap mutu minuman buah kawista. Parameter yang diamati pada penelitian ini adalah analisis vitamin C, pH, Total Padatan Terlarut(TPT), dan Uji Organoleptik . data hasil pengujian dianalisis menggunakan Uji Analisisof Variance(ANOVA) dengan taraf signifikan 5%  dan apabila terdapat perbedaan maka dilanjutkan dengan Uji Duncan’s Multiple Rate Test(DMRT). Berdasarkan hasil penelitian yang telah dilakukan didapati bahwa vitamin C tidak berpengaruh nyata, pH tidak berpengaruh nyata, selanjutnya total padatan terlarut(TPT) berpengaruh nyata, dan organoleptik juga tidak berpengaruh nyata.

(EFFECT OF TEMPERATURE AND LENGTH OF STERILIZATION ON THE QUALITY OF KAWISTA FRUIT DRINKS (Limonia Acidissima L.))

Abstract. Kawista fruit (Limonia Acidissima L) is a type of plant that belongs to the citrus tribe (Rutaceae) and potentially as a medicinal plant. Acehnese kawista plant is known as "batok", and often use kawista fruit as a flavor enhancer in foods such as rujak, used as an herbal remedy for those suffering from diarrheal or dysentery and kawista fruit is believed to increase stamina. This study aims to find out the effect of temperature and sterilization time on the quality of kawista fruit drinks. The parameters observed in this study were the analysis of vitamin C, pH, Total Dissolved Solids (TPT), and Organoleptic Tests. The test results data are analyzed using the Variance Analysis Test (ANOVA) with a significant level of 5% and if there is a difference then continued with Duncan's Multiple Rate Test (DMRT). Based on the results of studies that have been done found that vitamin C has no real effect, pH has no effect, furthermore, total dissolved solids (TPT) have a real effect, and organoleptics also have no real effect.
